GRILL CHICKEN CHOP
Chop chicken consists of chicken baked, grilled or smoked. There are many global and regional preparation techniques and cooking styles. Chicken grill often seasoned or coated with a spice rub, barbecue sauce, or both. Marinades are used to cut the meat and add flavor. Rotisserie chicken has become a well-known and popular in the US retail market .. grill chicken chop is one of the most popular barbecue dishes in the world.
Ingredients:
1. Debone chicken
2. Debone chicken for chicken rolled
( Marinate) :
2. Paprika
3. Salt
4. Dry parsley
5. Teh sauce
6. Garlic
DONE: ( CHICKEN MARINATE )
FOR SAUCE:
7. Black pepper
8. Roux
9. Demi glaze
10. Butter
11. Chicken Stock
HOW TO DEBONE CHICKEN WHOLE
1. Place your chicken thigh and leg on a clean cutting board with and boning knife.
2. Remove the rib bones using small strokes with knife.
3. Using the tip of the knife you can scrape against the bone to get all the meat.
4. Once you have most of the meat separated from the bone use chief knives to remove the bone.
5. Now the rib is disconnected from the thigh.
6. Use a boning knife and cut a slit through the thigh to get to the bone.
7. Make small strokes with your knife to get to the bone.
8. Once you get to the bone use the blade of the knife to scrape the chicken off the bone.
9. Next, locate where the thigh bones meets the leg bone.
10. Cut in-between the thigh bone and leg bone to remove.
11. Grasp the bone firmly and pull.
12. Fillet the tip of the chicken leg.
CHICKEN ROLLED
13. For the chicken rolled actually good part for rolled is chicken braised we used. But if we want to used the chicken whole the method the same to debone chicken. Use a meat mallet and gently pound the thigh meat. I used plastic wrap to help with the mess and also to prevent the mallet from tearing the meat. And for chicken rolled inside there should be have a vegetable blanch. Wrap use the plastic wrap then put in boiling water leave a 25-35 minutes. After done for the boil in the boiling water bake 180- 20 minutes.
HOWTO COOK IT:
1. Grilled the chicken marinate
2. ( Make a sauce )
a. Heat the saucepan
b. Use a little butter.
c. Put the black pepper
d. Put the Demi glaze
e. Add the roux
f. Add the chicken stock and salt
Done : Black pepper sauce
VEGETABLES SAUTE
1. Wash emidiately the vegetables
2. Boil into boiling water
3. After done, put the vegetable into cool water ( Blanch)
4. saute the vegetables.put the some of seasoning like salt and pepper.
